Our processed sausage, pepperoni and salami offers a choice to celiac suffers with gluten or wheat allergies.
We do feed all our animals a small amount of grain in order to provide them with a balanced diet of good nutrients, which is a proactive approach to health, and provides for high quality tender meat for you. All the grain we purchase is from a locally owned feed supplier. We make our living selling locally and we try to do the same when purchasing.
We only sell dry aged beef. The reason for this is that the 21-day dry aging process allows the natural enzymes to breakdown the hard connective tissue in meats and the water to evaporate away, concentrating the flavour. Our commitment to properly age our meat improves the quality and taste of steaks or roasts immensely and will bring back that “corner butcher taste” that you just don't get in the big chain supermarkets.
